still made by hand
Makkan peda belongs to Arcot. Thickened milk is worked down to soft khova, the dough is shaped by hand with pista, badam, cashew, walnut and dry fig worked through it, fried slow until the outside turns deep gold, then finished in sugar syrup so the centre stays melting soft.
There is no shortcut version of this. It takes time and it has to be made by hand. We make it in small batches the same morning it reaches you, which is the only way it tastes the way it should.
